In general, it’s not a great path to pursue blocking organic traffic that you think is irrellevant to your business. You should be AWARE of it certainly, and when you present to your client, perhaps filter out by country.
However, attempting to prevent traffic from specific countries could end up hurting your ability to rank for that query in countries you DO want.
As a side bar, it’s always good to explore potential partnership or external referral options and new revenue streams you could leverage with willing clients or eyeballs on your site that could be connected with someone else!
